Preheat the oven to 100°C. In a mixing bowl, beat the whole eggs and 5 egg yolks with the sugar.
In a saucepan boil the whole cream with the skimmed milk and add the split vanilla pod. Remove the vanilla pod then slowly pour the mixture over the prepared egg mixture while stirring without frothing.
Pour the mixture into 10 ramekin dishes, place in preheated oven and bake for 40 minutes.
Once cooked, remove from oven and sprinkle with brown sugar. Put under the grill or back in the oven until the sugar becomes brown and caramelised.
Allow to cool before serving.
